食への関心が高まる中、日本のオーガニック食品市場も順調に成長している。オーガニック食品に対する理論的な関心も高まっており、これまでも数多くの研究が蓄積されている。その主たる関心は、いかなる消費者が、いかなる動機からこうした財を購入・消費するかといった点に集まっており、一定の知見が得られている。しかし、こうした研究の多くは欧米の文脈で行われてきており、アジアを扱ったものも一定数蓄積されてはいるものの、日本を対象とした研究はまだまだ稀少である。そこで本研究は、オーガニック食品購買がいかなる要因によりもたらされるかについて、特に日本の文脈において理論的、経験的に考察することを目的としている。
本研究が解明しようとする従属変数は、オーガニック食品に対する消費者の購買意図や実際の購買行動である。これらの概念がいかなる要因によって規定されるかについて、大きくは刺激-生体-行動(SOB)アプローチに依拠しつつ、キーとなる概念について理論的に検討する。具体的には、刺激として「食の安全意識」「健康志向性」を、生体として「自己アイデンティティ」「倫理的自己アイデンティティ」「価値観」を、行動としては「購買行動」を中心に、関連する主要な概念について幅広く検討する予定である。また、これらの要因が購買行動に与える影響を経験的に検討するために、経験データの収集および分析も視野に入れている。
3年計画の2年目となる2021年度は、初年度同様、研究枠組構築および洗練のためにいくつかの研究活動を予定していた。しかし、特に対面でのヒアリングや店頭における観察調査については、新型コロナウイルス感染症の拡大を受け、引き続きその実施を控えることとなった。結果として、初年度の研究活動から得られた知見を発展させるため、オーガニック食品購買行動をはじめとする倫理的消費に関する既存研究をレビューし、研究枠組のさらなる精緻化を目指した。発見された知見について、学術雑誌投稿に向けて論文ドラフトをまとめている。
With growing concern of food safety, organic food market in Japan has steadily been expanding. There have been numerous studies about organic food consumption behavior, given the academic importance of such phenomena. The main focus of such studies lies in the characteristics of such consumers and their underlying motives. However, such attempts have been mainly conducted in non-Asian context, with very few studies on Japanese organic food consumers. Therefore, the purpose of this study is to investigate the antecedents of organic food purchase behavior, especially in Japanese context.
The dependent variables of this study include purchase intention and actual purchase behavior of organic food. Based on the Stimulus-Organism-Response framework, this study theoretically and empirically tries to identify the key causing factors of such variables. Specifically, it focuses on "food safety concern" and "health consciousness" as stimulus, "(ethical) self-identity" and "openness to change" as organism, and "stated buying behavior" as response. Simultaneously, it plans to scrutinize other related constructs in a broader theoretical context, and to test its framework by collecting empirical evidence.
As for the second year of the three-year research period, further research activities were initially scheduled. However, some of them were forced to be canceled because of the spread of COVID-19 pandemic, including face-to-face interviews and observations of consumers' purchase behavior at actual retail stores. As a result, further thorough literature review was conducted, expanding the scope of the research into more broad "ethical consumption" domain, in order to polish the research framework. Based on the findings, it is now preparing a draft for the possible submission to academic journals in the future.
