教職員の食の安全に対する考え方を明らかにするため, 中学校教諭(理科, 社会, 保健体育)を対象とし質的研究方法(デルファイ法)を用いた調査を実施した。その結果に基づき, 中学生の子どもをもつ母親を対象とし, Webサイトを利用した質問紙調査を実施した。また, 同時期に実施された内閣府食品安全委員会の調査結果も参考に, 児童・生徒の学びの促進のために, 食の安全に関する知識習得, 及び食のリスクを学ぶ教材を開発した。リスクについては, 食生活におけるリスクのトータルバランスを学ぶためのすごろく型ボードゲームと, リスク軽減を図るためのバランスゲーム(カード)である。
In order to clarify the way of thinking about food safety of teachers, we conducted a survey using qualitative research method (Delphi method) for junior high school teachers (science, society, health and physical education). Based on the results, we conducted a questionnaire survey using a website for mothers with junior high school students' children. In addition, with reference to the survey results of the Cabinet Office food safety committee conducted at the same time, we developed tools for learning about food safety and risk. One is a card game type tool to acquire knowledge about food safety and risk. The others are a Sugoroku type board game to learn the balance of risks in dietary life and a card type balance game to reduce the risk of food.
