食への関心が高まる中、日本のオーガニック食品市場も順調に成長している。オーガニック食品に対する理論的な関心も高まっており、これまでも数多くの研究が蓄積されている。その主たる関心は、いかなる消費者が、いかなる動機からこうした財を購入・消費するかといった点に集まっており、一定の知見が得られている。しかし、こうした研究の多くは欧米の文脈で行われてきており、アジアを扱ったものも一定数蓄積されてはいるものの、日本を対象とした研究はまだまだ稀少である。そこで本研究は、オーガニック食品購買がいかなる要因によりもたらされるかについて、特に日本の文脈において理論的、経験的に考察することを目的としている。
本研究が解明しようとする従属変数は、オーガニック食品に対する消費者の購買意図や実際の購買行動である。これらの概念がいかなる要因によって規定されるかについて、大きくは刺激-生体-行動(SOB)アプローチに依拠しつつ、キーとなる概念について理論的に検討する。具体的には、刺激として「食の安全意識」「健康志向性」を、生体として「自己アイデンティティ」「倫理的自己アイデンティティ」「価値観」を、行動としては「購買行動」を中心に、関連する主要な概念について幅広く検討する予定である。また、これらの要因が購買行動に与える影響を経験的に検討するために、経験データの収集および分析も視野に入れている。
3年計画の初年度となる2020年度は、研究枠組の構築のためにいくつかの研究活動を予定していた。具体的には、関連する既存研究の網羅的レビュー、実務家や消費者へのヒアリングの実施、店頭における観察調査、追加的な質問票調査の実施である。しかしながら、新型コロナウイルス感染症の拡大を受け、予定していた研究活動の多くを中止せざるを得なくなった。結果として、関連する既存研究の網羅的レビュー、および、本研究の準備段階で既に実施していた予備的なオンライン質問票調査から取得された経験データの分析を行い、発見事項についてまとめた。
With growing concern of food safety, organic food market in Japan has steadily been expanding. There have been numerous studies about organic food consumption behavior, given the academic importance of such phenomena. The main focus of such studies lies in the characteristics of such consumers and their underlying motives. However, such attempts have been mainly conducted in non-Asian context, with very few studies on Japanese organic food consumers. Therefore, the purpose of this study is to investigate the antecedents of organic food purchase behavior, especially in Japanese context.
The dependent variables of this study include purchase intention and actual purchase behavior of organic food. Based on the Stimulus-Organism-Response framework, this study theoretically and empirically tries to identify the key causing factors of such variables. Specifically, it focuses on "food safety concern" and "health consciousness" as stimulus, "(ethical) self-identity" and "openness to change" as organism, and "stated buying behavior" as response. Simultaneously, it plans to scrutinize other related constructs in a broader theoretical context, and to test its framework by collecting empirical evidence.
As the first year of the three-year research period, it was planning to do the following research activities: related literature review, interviews of practitioners and consumers in the organic food industry, observation at actual retailers, and supplemental data collection via online survey. However, COVID-19 pandemic made it impossible to conduct many of such activities. Consequently, it conducted a thorough literature review, analyzed some of the data which had been collected in pre-survey settings, and summarized some of the key findings.
